Whipped Pumpkin Butter

Makes a delicate and rich buttery spread with lots of pumpkin flavor and a hint of spice. Pumpkin Butter is made by reducing puréed pumpkin and lends deep pumpkin and spice flavor. It can be found at well-stocked supermarkets and specialty foods stores.

Serve with Soft Pretzel Breadsticks, or slathered on toast.

Soft Pretzel Breadsticks

Makes about 1/3 cup

Special Equipment: Standing Mixer with whisk attachment (or hand mixer, or whisk and a lot of elbow grease)

4 tablespoons unsalted butter, room temperature

3 tablespoons pumpkin butter

1/8 teaspoon table salt

Using mixer fitted with whisk attachment, combine ingredients together starting at low speed. Scrape down the bowl, then increase speed, whisking until no streaks remain and mixture has a very light spreadable consistency.

Serve at room temperature.
