Makes a delicate and rich buttery spread with lots of pumpkin flavor and a hint of spice. Pumpkin Butter is made by reducing puréed pumpkin and lends deep pumpkin and spice flavor. It can be found at well-stocked supermarkets and specialty foods stores.
Serve with Soft Pretzel Breadsticks, or slathered on toast.
Makes about 1/3 cup
Special Equipment: Standing Mixer with whisk attachment (or hand mixer, or whisk and a lot of elbow grease)
|4 tablespoons unsalted butter, room temperature
3 tablespoons pumpkin butter
1/8 teaspoon table salt
|Using mixer fitted with whisk attachment, combine ingredients together starting at low speed. Scrape down the bowl, then increase speed, whisking until no streaks remain and mixture has a very light spreadable consistency.
Serve at room temperature.
